Recette pour préparer des frites croustillantes
Si vous n’aimez pas les frites surgelées au supermarché, préparez des frites maison croustillantes et fondantes à souhait. Cela n’a rien de compliqué, car il suffit de choisir les bonnes variétés de pomme de terre, la bonne huile et la meilleure friteuse et le tour est joué. Vous pouvez manger vos frites nature, avec du fromage ou de la sauce.
Comment choisir vos pommes de terre ?
Il existe toute une variété de pommes de terre sur le marché. Le choix ne repose pas sur le prix. Pour faire des frites dignes de ce nom, choisissez des pommes de terre farineuses qui ont la particularité de ne pas absorber trop d’huile à la cuisson. On trouve sur le marché la bintje ou la pomme de terre à la peau et à la chair jaune pâle. Ensuite, il y a la manon de couleur jaune et de forme très régulière. Puis, il y a l’agria qu’on reconnait par sa couleur jaune foncé. L’agria convient à tous types de cuisson, dont la friture. Enfin, la vitelotte a une couleur violette. Préparée en chips ou en frites, ce type de pomme de terre a un goût de noisette.
Comment choisir votre huile ?
La frite belge a sa réputation partout dans le monde. Vous pouvez en préparer chez vous en choisissant la bonne huile. Les vraies frites sont à préparer avec de la graisse animale. Utilisez alors de la graisse de porc ou de bœuf pour offrir une saveur particulière à vos frites. Il faut cependant reconnaître que cette huile est riche en cholestérol. Heureusement, il existe une alternative, les huiles végétales, mais pas toutes. L’huile d’arachide est idéale pour les cuissons à haute température et est moins riche en mauvais cholestérol. L’huile d’olive est également parfaite, mais ne convient pas à une température élevée. Dans ce cas, pensez à plonger les frites dans de l’huile froide. Ensuite, laissez les frites frémir petit à petit jusqu’à cuisson. Dans tous les cas, changez régulièrement l’huile, en moyenne au bout de 5 à 7 bains de friture. Pensez à la filtrer entre chaque utilisation.
Comment préparer vos frites ?
Une fois vos pommes de terre découpées en lamelles, prolongez-les dans de l’eau chaude un peu salée. Laissez vos frites dans l’eau pendant 10 minutes environ pour retirer l’excédent d’amidon. Puis, sortez les frites et essorez-les avec du papier absorbant, car l’eau peut se transformer en vapeur une fois dans la friteuse et risque de dissocier l’huile de friture. Ces techniques garantissent une meilleure cuisson. Ensuite, procédez à deux cuissons consécutives. D’abord, plongez vos frites dans de l’huile ou de la graisse fondue à 130 ou 150°C pendant une quinzaine de minutes. Une fois qu’une croûte solide se forme à la surface des frites, retirez-les de la friteuse. Ensuite, quand vous allez servir les frites, replongez-les dans de l’huile chauffée à 180°C pour les faire dorer à votre convenance.
